Sweet potatoes the way we like them

About a month ago, in between watching world cup football games, Mr Vin de Table and I felt like eating potato chips. Potatoes rarely make it into our weekly veggie purchases, but we happened to have a couple of sweet potatoes laying around, originally purchased to be roasted with loads of other veggies, but were somehow forgotten about. I decided to re-purposed them to be chips! It took all of 10mins in prep (if that) and approximately 50 minutes to roast:

– 2 medium sized sweet potatoes, cut length-wise, in wedges
– Sprinkle with fleur de sel, or kosher salt and cayenne pepper (all to taste)
– Drizzle with olive oil
– Roast in 400 degree oven for 50 minutes, turning once after the first 25 minutes

While your potatoes are in the oven, combine 2tbs of mayonnaise with 1 tbs of store bought hot pepper relish. Once potatoes are done, divide dipping sauce and potatoes between 2 plates and serve.

This works really well as a light weekend lunch followed by some fresh fruit and a cup of tea!
